Basic Stir-fry Sauce for Chinese Dishes

Category: Dressing/Sauce
Source: Kristen J. Gough
Ingredients: 3/4 tsp. cornstarch
1/4-1/2 cup chicken broth
2 Tbsp. soy sauce
1 Tbsp. white grape juice, white wine or water
1 tsp. sugar
1/2 tsp. sesame oil (optional)
1/2 Tbsp. rice wine vinegar (optional)
Directions: Place all ingredients in a small saucepan and bring to a gentle boil. The sauce will thicken (about 3 minutes or so). Whisk constantly. Add vinegar if you want to give the sauce a tart flavor. You can also substitute dark soy sauce for a richer flavor.
