Best Mac 'n Cheese

|Ingredients:||1 lb. pasta noodles
4 Tbsp. butter
1 1/2 cups half-and-half
6 slices American cheese
1 1/2 cups sharp cheddar cheese (shredded)
1/2 cup gruyere or other strong cheese (shredded)
4 oz. cream cheese, softened
Dash of cayenne pepper
Salt and pepper to taste
|Directions:||Make a pound of pasta following the package directions.
In a medium saucepan over medium heat melt the butter.
Add the half and half to the butter and whisk vigorously to combine.
Add the cream cheese and whisk again.
Reduce the heat to medium-low and add in the shredded cheeses along with American.
Season to taste and add more half and half or grated cheese to get your desired consistency.
In a large bowl combine the pasta and the cheese sauce. Stir.
