Fiesta Salad

Prep Time: 15 minutes
Number of Servings: 4
Ingredients: 2 heads of green leaf lettuce, washed and dried
2 cups grilled chicken (rotisserie works well, too)
1 can black beans, rinsed
1/2 cup black olives, sliced
1/2 cup diced onion
3/4 cup diced tomato
1 cup shredded cheddar cheese
1 cup tortilla chips (Kevin suggests the multi-colored variety)
1 cup ranch dressing
Mild wing sauce
Directions: 1. Place 1 to 1 1/2 cups salad on each plate.

2. Next, stack the chicken, beans, tomato and onion on each serving.

3. Top each with olives and cheddar cheese.

4. In a measuring cup, mix enough wing sauce into the ranch dressing to give it a kick and a slightly pink color.

5. Drizzle the dressing on each salad.
