Pecan Pie Cookies

Ingredients: Cookies:
1 cup brown sugar
3/4 cup butter (room temp)
1 egg
1 tsp. vanilla
2 cups all-purpose flour
1 tsp baking powder

1 cup chopped pecans
1/2 cup brown sugar
1/4 cup heavy whipping cream
1 tsp. vanilla
Directions: 1. Combine all cookie ingredients – EXCEPT flour and baking powder. Beat until creamy.

2. Add flour and baking power a little at time until mixed well (don't over-mix).

3. Combine and mix all filling ingredients in a separate bowl.

4. Shape cookie dough into 1 1/4" balls and place on ungreased baking sheet.

5. Make indentation in each cookie.

6. Fill each cookie with 1 teaspoon of filling.

7. Bake for 8-12 minutes or until lightly browned (don't over bake).

8. Cool 1 minute and remove from baking sheet.

9. Enjoy!
