Queen Elizabeth Cupcakes

Number of Servings: 18 cupcakes
Ingredients: 1 cup boiling water
1 cup raisins
1 tsp. baking soda
1 cup sugar
1/2 cup unsalted butter (softened)
1 large egg (beaten)
1 tsp. vanilla
1 tsp. baking powder
1 1/2 cups flour
1 tsp. salt
Directions: 1. Preheat oven to 325 degrees.
2. In a small bowl, pour boiling water over raisins and baking soda (let stand while performing next step).
3. In a large mixing bowl, combine the dry ingredients and mix on low speed for 30 seconds to blend. Add the butter, egg and vanilla and mix on low speed until the dry ingredients are thoroughly moistened. Add raisin mixture and beat on medium for 1 1/2 minutes to combine thoroughly.
4. Fill paper-lined cupcake tins two-thirds full, and bake at 325 degrees for 20 to 25 minutes, or until a wooden toothpick inserted in the center comes out clean.
5. Frost when entirely cooled.
