Strawberry Angel Pancakes

|Ingredients:||3/4 cup unbleached flour
1/2 tsp. baking powder
1 tsp. baking soda
3/4 tsp. salt
2 eggs, separated
1/3 cup sour cream
1/2 cup milk
1 cup ricotta cheese
2 cups sliced strawberries soaked in white sugar for two hours at room temperature
Mix together flour, baking powder, baking soda and salt. In separate bowl, mix egg yolks, sour cream, milk and ricotta cheese. Pour wet ingredients into dry ingredients and stir. In separate bowl, whip egg whites until stiff, and then fold into mixture. Heat griddle to 350 degrees and coat with nonstick cooking spray, then drop batter onto surface by the 1/4 cup. Flip when bubbles form around edges of pancakes. Top with strawberries and powdered sugar.
