Vegan-Friendly Pancakes

Ingredients: 2 cups unbleached white or wheat flour
2 cups soymilk
2 Tbsp. baking powder
2 Tbsp. unbleached sugar
Dash of salt
Directions: Mix together flour, baking powder, sugar and salt in a large bowl. Add soy milk and stir until smooth. (Batter will be slightly lumpy.) Heat griddle to 400 degrees and coat lightly with nonstick cooking spray. Spoon batter onto hot surface and cook until golden brown, then flip. Serve with margarine, maple syrup, fruit sauce or topping of your choice.
