Russian Tea Cakes were a classic Christmas cookie that my mom made every year. They are her quintessential cookie – not too sweet, buttery and delicious when served with tea. As a kid, I didn’t quite appreciate the simple goodness of this addition to our family recipe box. It wasn’t gooey or chocolaty enough to tempt my taste buds. But I sure enjoyed helping my mom roll them in powdered sugar (or confectioners’ sugar, as it is more formally called).
I also thought they looked like little snowballs, so that’s what I started calling them. Truth be told, this cookie has many names, including Mexican Wedding Cakes, for one. No matter what you call them, though, they’re an old-school favorite that you’ll love – and your kids just might, too.
