Easy Seafood Dishes to Make for Dinner

Things are getting a little fishy around October. Here’s the reason: It happens to be National Seafood Month. Now, if you don’t have many fish dishes in your current dinnertime line up, these recipes may convince you to start adding more. Most of these are easy to turn out in a hurry and have only a few ingredients. For something familiar, start with do-it-yourself fish sticks. For handheld treats, the impossibly easy mini crab pies are made in a muffin tin. For a taste of local flavor, you can’t go wrong with the red chile salmon burger courtesy of The Fly Trap in Ferndale.

Teriyaki Salmon

This teriyaki salmon recipe from Real Simple is done in just 20 minutes. Yes, just 20 – and it’s mostly baking time. Whisk together soy sauce, sugar, rice wine, ginger, lime juice and wasabi. Pour on a 3/4-pound salmon fillet and put it in the oven. While it’s cooking, you’ll have time to mix up rice or make a salad to go along with the flavorful main course.

One-Dish Tuna Casseroles

Do you have canned tuna in your pantry? Then you can whip up a pan of tuna casserole from Kraft. Instead of just one idea, this recipe includes several. You mix together the base of the dish – tuna with Miracle Whip, pasta and cheese. Then choose from the list to create your own, unique dish like tuna with mustard, celery, apples and walnuts.

Leeky Linguine with Shrimp

Fill the pasta pot with water – it’s time to start boiling! This leeky linguine with shrimp recipe from Rachael Ray is spiked with garlic, crushed red pepper and grated lemon peel. Add leeks, which are like large, mild green onions and you have an easy dinner that’s fast enough for weeknights but fancy enough for a special occasion.

Fish Sticks

Bake up your own homemade fish sticks with this recipe from Disney. Choose a white fish like cod or tilapia and then cut the meat into thin strips. Coat with bread crumbs seasoned with Parmesan cheese, garlic powder, paprika and salt. Bake until golden brown. Delish!
