Rotisserie Chicken Recipes for Quick Dinners

Most grocery stores make it easy to pick up a rotisserie chicken to take home for dinner – they keep them right next to the registers. Once you’re home, have your kids get to work on trimming the meat from the bones while you prepare the rest of the ingredients for the meal. There are so many ways to use this meal shortcut: Keep it simple by making upscale rosemary chicken salad sandwiches or spicy chicken quesadillas with black beans and corn salad. Try a new spin on a classic recipe with BBQ chicken and blue cheese pizza or light king ranch chicken casserole.
