Zucchini Recipes: Ways to Incorporate Veggies Into Your Diet

It’s zucchini season! Whether you grow your own zucchini, your neighbor brings them to you by the basketful, or you find them at your local farmers market, make sure to stock up. Zucchini are so versatile you can use them in appetizers, meals, dessert – you name it! Make a whole buffet ‘o zucchini by starting with baked cheesy zucchini bites. For your entrée, serve zucchini casserole or Italian zucchini crescent pie with a side of zucchini fries and zucchini cornbread. Finish off your meal with chocolate zucchini cake. And if you still have extra zucchini after all those recipes, shred it and freeze to use in recipes throughout the year.

 

Cheesy Zucchini Bites

Start by cutting the zucchini into 1 inch-thick slices and then scooping out enough of the inside to make a bowl.
